CLASSIC MIRE POIX. ONCE THE MIRE POIX IS SOFT ADD A BIT OF BUTTER AND FLOUR AND WISK THAT IN.THROW IN S&P, DRIED THYME AND BASIL. ADD IN TOMATOES AND CHICKEN STOCK. SIMMER, SIMMER, SIMMER THEN WISK IN SOME CONDENSED MILK OR HEAVY CREAM. PUREƉ WITH A HANDFULL OF FRESH BASIL.

SERVE IT UP AND TOP WITH FRESH BASIL.
