CROQUE-MADAME

THE FIRST FEW WEEKS I SPENT IN FRANCE SO MANY YEARS AGO, I ATE EITHER AN OMELETTE OR THIS SANDWICH, THE CROQUE-MADAME. THESE WERE MY ONLY TWO OPTIONS, AS I DIDN'T SPEAK MUCH OF ANY FRENCH.

IT SEEMS LIKE LIFETIMES AGO SINCE I LAST VISITED PARIS. IT WAS ACTUALLY TWO LIFETIMES AGO, BOTH OF MY DAUGHTERS LIFETIMES AGO THAT IS. ONCE I GET THINGS RESOLVED FOR THEM IN MEXICO, I'LL HEAD BACK TO EUROPE AGAIN.

FOR NOW, THIS IS MY HOMEMADE VERSION OF THE CLASSIC SANDWICH. FRENCH BREAD, CURED HAM, WISCONSIN SHARP CHEDDAR, DIJON AND HOMEMADE BÉCHAMEL. OH, A FRIED EGG TOO OF COURSE.
