I STOLE THIS RECIPE DIRECTLY FROM MY TIME LIVING IN SAN MIGUEL DE ALLENDE. THERE WAS A LITTLE CART IN EL JARDIN WHERE THIS ROASTED CORN WAS SOLD. GREAT LITTLE MID DAY SNACK.


ROAST THE CORN ON HIGH ON THE BBQ. CUT THE KERNELS OFF AND MIX WITH LIME, MAYO, COTILLA CHEESE AND CAYENNE PEPPER.
