MY PASTA DOUGH MIX IS SIMPLE. 3 CUPS AP FLOUR, 4 LARGE EGGS, (ROOM TEMPRATURE) AND 1/4 TEASPOON SALT.


BLEND FLOUR AND SALT, MAKE A WELL, CRACK THE EGG IN AND GO TO TOWN ON THAT. PROOF THE DOUGH FOR 20 MINUTES OR SO WRAPPED IN PLASTIC. ROLL IT OUT AND CUT IT UP.
