What can I say? Get yourself a good cut of brisket and be prepared to babysit it for a day. Keep the temp even and you're golden.

Rubbed this one down and let it rest over night. Smoked it at 220 F for 8 hours.

To be honest, this was my first attempt at smoking meat. I learned a lot and took those lessons woth me for future smokes.
