INTRODUCING MY SIGNATURE SOUP, SOPA MAYABELA!


LAST WEEK I WAS IN THE YUCATÁN, AND STARTED CONCEPTUALIZING THIS DISH. ITS A RIFF ON THE CLASSIC AZTEC SOUP THAT INCORPORATES INGREDIENTS OF THE MAYAN INDIANS RATHER THAN THE AZTECS.


MEXICAN GULF SHRIMP, TOMATO SHRIMP STOCK, NAVARRO PANEL CHEESE, HASS AVOCADO, MEXICAN CREMA, LOCAL TORTILLAS FOR THE HOMEMADE CHIPS.
