IN 1986 I WAS 10 YEARS OLD AND WENT TO ZIHUATENEJO WITH MY FAMILY AND I HAD THE MOST AMAZING CHEESEBUGER.


IN RECOLLECTION IT WAS THE STANDARD "STREET MEAT" BURGER, BUT WITH A VERY TASTY TWIST. FLUFFY SALTY QUESO OAXACA AND CREAMY AVOCADO. THAT AND A METRIC FUCK-TON OF MAYO, CREMA AND SALSA.


IVE BEEN BACK TO THE SAME CART ON THE NORTH SIDE OF THE PLAZA PRINCIPAL. SAME GUYS. SAME BURGER.


I TOOK THEIR VERSION OF A BURGER AND ELEVATED IT AND AM GRATEFUL TO THEM FOR THE INSPIRATION.


80/20 BEEF JUICY LUCY STUFFED WITH QUESO OAXACA, TOPPED WITH BACON, (THAT I SMOKED), AVOCADO AND MORE CHEESE.


BEST BURGER I'VE EVER MADE AND IT ONLY TOOK 33 YEARS FOR ME TO BRING IT TO FRUITION FROM THAT FIRST TASTE I HAD ON THE BEACH IN 1986.
